Final value = principal × (1 + APY ÷ 365 ÷ 100)^days
The annual APY is converted into a daily rate by dividing it by 365. Each day your staked balance grows by that daily rate, and because the reward from the previous day is included in the next day's calculation, the growth compounds — that's why the number of days appears as an exponent. Reward is simply the final value minus your original principal.
